I intend to drop 10lbs in June and play 5-10k hands of 200NL at night when the games are the softest.

You haven't said if he is able to make thin calls. I wouldn't shove here 200bb. 100bb easy game, but this is 3 way and he pots and we have the 3rd nuts with only a couple of possible lower flushes. people can find folds with J's. You make it obvious you have a flush.
51 vpip? He probably didn't even notice the backdoor flush got there (which isn't as bad as it sounds, as I do it all the time). Yeh it's a snap shove vs him specifically, sounds like he's pot calling a J like always.
